Coconut Protein Cookies.
- 5 cups coconut flakes, shredded
- ½ cup sunflower seeds, chopped
- ½ cup high-quality protein powder
- 1/4 cup honey, raw and organic
- 1 teaspoon of vanilla
- 1 teaspoon of cinnamon
- 2 tablespoons of coconut oil
- 1/8 cup water
First, preheat the oven to 300F. Add all ingredients in a bowl and store well. Make sure the texture is smooth and even, without any lumps. If needed, add more coconut oil and/or water. Form cookies and lay out on a cookie tray. Press the cookies until flattened. Place tray in the oven and cook for 15 minutes.
If you are not fan of sunflower seeds, add other nuts of your choice or increase the coconut flakes content to 2 cups. If you use other nuts, make sure you chop them finely and even use a blender if necessary. If you want an extra dose of flavor, mix several types of protein powder. Finally, as a décor, make coconut whipped cream and use it to make delicious protein cookie sandwich.
